From Friday 27 May, don’t miss our new weekly culinary rendez-vous at the restaurant La Table des Oliviers. The preparation and sharing of couscous on Friday lunchtime, the day of prayer, is a deeply rooted tradition among Moroccans: a true symbol of sharing and solidarity, a sign of local hospitality and generosity. It was therefore important for us to create this new culinary event to bring together Marrakchi gourmets around a table and share this gourmet moment with our international customers. Historians often attribute the origin of couscous to the Berber people (an ethnic group from North Africa). The term ‘couscous’ refers to both the semolina (once steamed) and the entire dish. In Morocco, there are many different types of couscous, both savoury and sweet. Our Chef Khalid has decided to offer you a gourmet version based on Khoumassi Maftoul, beef shank and seasonal vegetables. A treat for the taste buds and the eyes: as tradition dictates, a single dish will be served for lunch. The more courageous can try the traditional method of eating with the right hand, with a spoon or with the help of bread.
